Chicken and Lentil Stew

chik lentil stewHealthy food doesn't have to take a long time. This recipe is an easy, "quick-fix" for a well-rounded meal. Packed with fiber and protein, this stew requires only a few main ingredients, and can be ready in less than 15 minutes.

Ingredients:

1 pack Nature's Promise Sun-Dried Tomato and Basil Chicken Sausage

2 cans (4 cups) of Amy's Organic Lentil Soup

4 cups Organic Baby Spinach

2 tbsp Extra Virgin Olive Oil

1 tbsp of Mrs. Dash Extra Spicy Seasoning

Preparation:

1) Saute the chicken sausage in a pan with 1 tbsp of olive oil until cooked through.

2) In a separate pan, saute the baby spinach with 1 tbsp of olive oil.

3) Pour 2 cans of lentil soup into pot and heat on stove top until warm. Add Mrs. Dash Extra Spicy Seasoning to taste. Once cooked, remove chicken sausage and chop into bite-sized pieces. Place chicken sausage into pot with soup and add cooked spinach. Stir contents and serve in large bowl to enjoy!
